This is our favorite snack right now! And the kids too. Here's what to do:

Ingredients:

  • Ezekiel tortillas
  • 1 can chickpeas
  • ½ cup tahini (sesame paste)
  • 1 garlic clove , minced
  • 1 handful parsley
  • ½ cup water
  • Juice from 1 lemon
  • 1 TBS oil
  • 1 heaping tsp cumin
  • Salt & pepper to taste

Directions:

  1. Preheat oven to 400 degrees
  2. Cut tortillas into squares (or any other shapes) - I used a pizza cutter
  3. Place squares on wax paper that is on a cookie sheet
  4. Drizzle with olive oil and sprinkle with garlic, salt, pepper or any other seasnonings
  5. Bake 13-15 minutes, flipping and checking that they don't burn

For Hummus: just blend all the ingredients (after the tortillas) in a food processor until smooth. One and done!
