We made this easy and delicious dinner the other night. It's a veggie packed wrap with a avohummus spread (avocados and chickpeas).

Ingredients:

Spread

  • 1 can of chickpeas
  • 1 avocado
  • Handful parsley
  • 1 tablespoon olive oil
  • Seasonings to taste (a little cumin, salt, pepper, etc)

Wrap

  • Whole grain wrap
  • Cucumber
  • Tomato
  • Any other veggie you love (sprouts, kale, peas, edamame, etc)

Directions:

  1. Add the ingredients for the spread to a food processor.
  2. Process until smooth adding water if it gets stuck.
  3. Add spices to taste.
  4. Spread on wrap and fill with veggies
