OMG are these delicious! I made these bars as a healthy snack for myself and the kids. They were a hit!

I will share how I made them below but keep in mind that you could really put anything in these!


  • 3/4 cup oats
  • 1/2 cup almonds, chopped
  • 1/2 cup walnuts, chopped
  • 1/2 cup sesame seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup goji berries
  • 1/4 cup dark chocolate chips (cacao nibs are even better!)
  • 2 TBS chia seeds
  • 1/2 cup brown rice syrup
  • 1/2 cup all natural nut butter (I used peanut butter here)
  • Shredded coconut for sprinkling


  1. Mix it ALL together!!
  2. Lay parchment paper in a baking dish and flatten the mixture down to desired thickness
  3. Sprinkle with shredded coconut and pop into the freezer for an hour or so
  4. I transfer it to the fridge after it's been frozen because it keeps best when cold or frozen (otherwise tends to break apart).
