This kale salad is perfect for work lunches or BBQs. I love adding superfoods to my salads especially this one. Here I have added protein with hemp seeds. You can add flax, chia, or any other seed/nut.

- a few kale leaves, de-stemmed
- 1 tsp olive oil
- 1 tsp apple cider vinegar
- a couple strawberries
- hemp seeds
- avocado (optional)

1. Mix olive oil and apple cider vinegar together in a bowl.
2. Chop kale and combine with oil/vinegar mixture on top.
3. Massage your kale for a few minutes until it is a dark rich color and is softer.
4. Chop strawberries and add to kale
5. Add any other veggies (I like avocados and cucumbers)
6. Add your superfood (hemp seeds here) and mix.
