This is such an easy breakfast or a snack to take to work.


  • 2 TBS chia seeds
  • 1 cup coconut milk (you can use almond too)
  • 5 strawberries (or any other fruit)
  • Maple syrup - optional
  • 2 TSP Cinnamon - optional


  1. Put chia, milk, and cinnamon (or any other desired spices)  in a jar. Shake well.
  2. Chill in the fridge overnight.
  3. In the morning, pulse the strawberries in a small blender until smooth.
  4. Combine strawberries with chia pudding. Add maple syrup to make it sweeter if you wish.
