Who doesn't love a good sushi roll? But some of those rolls have up to 1 cup of rice! WOAH! That is especially detrimental when the rice is white. Did you know that 5 cups of white rice have all the nutrients as 1 cup of brown rice? Always opt for brown rice when you go out for sushi or Chinese.

But here is a quick, easy, and nutritious recipe for sushi without the rice.


  • Nori sheets (Nori is a sea vegetable high in minerals and nutrients. You can find this on Amazon or Whole Foods)
  • Veggies of choice (sliced thinly) - I used cucumbers in the pictures below
  • 1/2 Avocado
  • Sesame seeds


  1. Lay nori sheet flat
  2. Spread avocado on first half of sheet
  3. Add sliced veggies
  4. Top with sesame seeds
  5. Roll (burrito style)
  6. Cut into bite size pieces
