Easy Vegan French Toast
We love making this on weekends (and sometimes my son asks me to pack him some for lunch). I use cinnamon raisin Ezekiel bread because it is the most nutritious bread out there.


  • A few slices Ezekiel bread
  • 1 banana
  • Vanilla almond milk (we use Whole Foods brand because it does not contain a dangerous chemical called carrageenan)
  • Cinnamon
  • Coconut oil

  1. Add coconut oil to pan (a tablespoon should do). Let it melt
  2. In a bowl mash the banana
  3. Add about 1/2 cup almond milk
  4. Sprinkle cinnamon liberally and mix well
  5. Dunk bread making sure to coat both sides.
  6. Arrange slices on the pan and flip after a few minutes.
  7. Enjoy with maple syrup, peanut butter, or alone!
