Coconut Milk
My baby just turned one and we have received the OK to switch her from formula to milk in an effort to fatter her up a bit. I made this coconut milk using canned coconut "cream" (organic canned coconut).

I mixed in a sauce pan with 2 cups water until it became liquid and was hot (not boiling). Then I poured it into a jar. It will stay fresh in the fridge for a few days. Just keep in mind that the coconut meat often separates so give it a little shake or heat it up before serving. This is also pretty yummy in your cereal or coffee. Drinker beware: TONS of fat (but good fat). Good fat is essential for proper brain function and to keep you full longer. Those trying to lose weight should always incorporate good healthy fats into their diets (flax, coconut, avocado, etc.)
