Healthy as can be brown rice minestrone soup!And did I mention super easy?

Ingredients:

Black beans & kidney beans soaked overnight with kombu (just water is fine too - it just makes it easier to digest)
1 cup brown rice soaked overnight (to release phytic acid so it is easier to digest and makes it easier to absorb minerals) cooked with 2 cups waterTablespoon minced garlic
Onion, chopped
A few celery stalks, chopped
A few carrots, chopped
28oz pureed tomatoes
4-6 cups water or stock (depending on pot)
2-3 bullion cubes (if using water)

Directions:
1. Warm some olive oil in pot and satuee onions
2. Once browned, add garlic and sautee a few more minutes
3. Add remaining ingredients (ensuring to rinse beans first)
4. Bring to a boil and then simmer until veggies are soft
5. Try it and add some seasonings to taste
